The population threshold for soy as an allergenic food – Why did the Reference Dose decrease in VITAL 3.0?
2021, Trends in Food Science and TechnologyCitation Excerpt :The Codex decision was based primarily on the pediatric prevalence of soy allergy and a few reports of severe reactions. Duke (1934) reported the first case of soybean allergy in the U.S. in a patient who may have been sensitized by occupational or environmental respiratory exposure but then became reactive to ingestion of soy foods also. For many years, infants with cows' milk allergy were placed on an alternative formula based on soybean.

2012, Process BiochemistryCitation Excerpt :It is very popular in the food industry. However, soybean is also a dietary allergen source for humans [3] and has been identified as one of the top eight allergenic foods [4]. The incidence of soybean allergies in humans is high (approximately 0.5% of the American adult population [5,6]), especially in children nourished with soy protein-based formulas [7,8].
